The Sage Sting


  • 1.5oz Monday Gin
  • 1.5oz Fresh Lemon
  • .5oz Honey Simple Syrup
  • .25oz Egg White or Aqua Faba
  • 3 Sage Leaves


Combine Monday, lemon, syrup, and 2 sage leave to cocktail shaker and stir vigorously. Add egg white and ice to the mix and shake hard for at least 30sec. Strain into chilled coupe style glass and garnish with remaining sage. Pro tip: Slap the sage in the palm of your hand to release the good stuff before placing in the glass.

To make the syrup, add honey and water to a sauce pan 1:1. Simmer until honey has dissolved fully. Let cool before using.
